I found out from this thread that Come Out And Play by Offspring is their only AT 40 entry. I really dig Offspring and that's definitely a favorite of mine.
A few other posters mentioned Beds Are Burning. I hear other Midnight Oil songs a lot on new wave / alternative stations, so I kinda forget that is their only AT40 hit. It's a great tune.

If we're just talking artists that only had one top 40 hit, here are some that come to mind (my apologies if any of these have already been mentioned): Scritti Politti "Perfect Way" (funny enough, they had five top 40 hits in the UK, but "Perfect Way" wasn't one of them) Bourgeois Tagg "I Don't Mind At All" Gavin Christopher "One Step Closer To You" Autograph "Turn Up the Radio" Frankie Goes To Hollywood "Relax" Frankie Smith "Double Dutch Bus" (sorry Hervard ) Donna Allen "Serious" Aldo Nova "Fantasy" Rainbow "Stone Cold" Change "A Lover's Holiday" Re-Flex "Politics Of Dancing" Roachford "Cuddly Toy (Feel For Me)" Danny Wilson "Mary's Prayer" Living In a Box "Living In a Box" GTR "When the Heart Rules the Mind" Soulsister "Way To Your Heart" Somebody mentioned the System's "Don't Disturb This Groove". Just thought of another one from the early '70s that I really like, and didn't yet see mentioned here (even on slf's extensive list): Wadsworth Mansion's "Sweet Mary" from '71. Notable for debuting at #15 and peaking two weeks later at #7! Never knew where the group got the name from until a couple of weeks ago while channel-surfing. Came across a recent episode of PBS' "Antiques Roadshow" that was taped at the actual Wadsworth Mansion, which is in Connecticut!

Good to see a mention for the only US hit by my favorite 80s band, bar none: "In a Big Country" by Big Country.
In the UK, they had 15 top 40 hits, including 4 top 10s.

'Way To Your Heart" by Soulsister missed the top 40 reaches of Billboard used for Shadoe AT40, but made the top 40 reaches of R&R CHR used for Casey's Top 40 and Rick Dees Weekly Top 40. Right, it peaked at #33 on R&R. Somehow it just missed on Billboard--peaked at #41 (#44 on Cashbox). Should've been a top 10 hit. 1989 was such a weird year for top 40 music.
